The journey to open Palomar Fish Tacos began after Blanca's cross-country trip to the Lowcountry in 2021, where she was inspired to bring the taste of the West Coast to Charleston. With nearly 30 years of experience in the restaurant business, Blanca and her husband decided to open their dream restaurant after their children were grown.
